As we wrap up the week at the Griffin Studio, we thought we'd post our archive piece of the week. This American military 1950's Smock is trimmed with fur and button collar and cuffs, it's got us in the mood for 'Ice Station Zebra', a great military film from the 60's if you get a chance check it out. Have a great weekend!

Italian Breakfast.

Probably good to have a breakfast without meat... Yes back in Italy, Bristol to Bergamo.. easy.. but come on samples! and my carbon footprint had been great for January, and this has thrown it out of the window. must go its almost pasta time.

Steak and Kidney pie.

Steak and Kidney Pie, yes a classic.. l got this one from Delia Smith, plus l marinated the beef in red wine, garlic, vinegar, zest of orange, bay leaf, pepper, salt . The beef is again from the Kings in Edington, the breed Belgium Blue.. "A lovely Cow" l must say. And the pastry is suet crust pastry, so easy... The Kidney was from our pigs, which Elvis still managed to dig out... Bloody Kids... it floored us, we had the rest for Monday evening it was that good.. Off to italy 4am.. to get the last of the samples for Japan.. Love Delia!

New Arrivals... Rare breed Oxford Sandy and Black.

So done NYC, Tokyo, Kamakura, Drunk on New Year and the snow.. And its only Friday 9th January ..... Plus the pigs have arrived.. After visited Japan for many years and falling in love with their food, there is a simple point. The quality of the food, the right season, where it has come from, why does it taste so great!
The Japanese Empire loved The Middle White Pig for its Pork, its a small rare breed pig which has a mouth watering taste, not a commercial pig as its small and slow growing. We got these after 8 weeks once its weined off the mother. What l didn't know is you can't get pork and bacon from the same animal because pork comes from a younger animal, for the bacon we have gone for a Oxford Sandy & Black which is a great bacon pig but can be used for pork. l went for the Oxford Sandy and Black because l saw it at the Bath & West Show and it looks so great, ginger with black markings.. very good looking and alot of fun running and jumping..

So how does this fit with fashion...
The way l see it fashion was always about looking forward and what will be fashionable. l believe traceability and knowledge of the old ways will be become more important.. l can drink Stella, but l know its a licensed chemical lager and l will have a sore head in the morning. lf l eat a bacon sandwich and the package says 87% Pork (what is the 13%) and from Denmark, what does this mean? l've been told all that means is its packaged in Denmark. What was this pig, where did it come from, what did it eat, what am l eating?
lts the same with our clothing l know where the fabric has come from, sometimes the designer and family of the mill plus the machinists.... When you see jeans and clothing for silly £cheap where is this from? Anyway its Friday night and off for some of that chemical Lager..... Do l sound to old to say a pint of IPA, real Ale...? Sh*t l'm getting old....

Interview in Tokyo

This was a photo taking in a interview in Tokyo, its good to get all fashioned up after being in the country to long... Tokyo is great you can wear anything. Look at everyone not a track bottom in sight, its the style capital of the world... Comme de Garcon, Corso Como, Dover Street Market, new Nike store, North Face Purple label gets bigger and better, Woolwich, Filson, Engineered Garments new Store.. alot to see.. l will do some films once l've stopped cooking, eating and drinking..

Middle White Pork is incredible

You must try it... Pork was a meat l thought for years was dry and cardboard in texture. Then after seeing a program of where our pork comes from, it says its Danish but its only packaged in Denmark, it says its pork but its from a bacon pig, the life they have the injections.. F**K THAT... Then you learn more about the breeds, what the Spanish love, what the Italians do for Parma Ham, we did a day course locally ... Fashion gets wieners and know we are eating them... Next is the new arrivals two bacon pigs, oxford sandy and blacks.

Rabbit Pie

Just back from Tokyo, jet-lagged and the snow has arrived. lt looks great out there and l hear more is to come.... l love it.. Also there's no point going very far, so staying in, chilling drinking and alot of cooking for the party and over Christmas and new year. Having the freezer full of our pork means roast pork, shoulder of pork, sausages, and sweet and sour pork balls.. Plus Bob from down the road delivered a box of his Beef...
Then the dogs caught a few rabbits, so a bit of a meat feast but alot people passing though... its a good way to do it.. alot of winter veg, dripping and diary... well its bloody cold out there.. With the rabbit l baked with olives, bay leafs in a clay pot, added potato, carrot then potted in a puff pastry case... tasted great... and very cheap...
